Tourists discreetly approached the door of the room, where the February sun had stopped being shy and shone with the <strong data-start=\"431\" data-end=\"461\">strength of another season<\/strong>, trying to understand who belonged to that group cheerfully discussing, encouraged by <strong data-start=\"548\" data-end=\"568\">bottles and food<\/strong>. The table looked like a Sunday or special celebration, with heavy white tablecloths and silverware.<\/p>\n<p data-start=\"671\" data-end=\"902\">The place was unbeatable, a green and stone oasis: the <strong data-start=\"726\" data-end=\"747\">Jardins d\u2019Alf\u00e0bia<\/strong>, in Bunyola, Mallorca, a \u2018possession\u2019 open to visitors and owned by the <strong data-start=\"820\" data-end=\"840\">Zaforteza family<\/strong>, with Cristina Zaforteza, the manager, acting as the hostess.<\/p>\n<p data-start=\"904\" data-end=\"1151\"><strong data-start=\"904\" data-end=\"921\">Water rituals<\/strong> at the vaulted cistern and the pergola with 72 columns, still without its lush vegetation cover. Everything was unprecedented, and the greatest privilege was to <strong data-start=\"1083\" data-end=\"1104\">eat in the palace<\/strong>, where these kinds of events were exceptional.<\/p>\n<p data-start=\"1153\" data-end=\"1416\">The sisters <strong data-start=\"1165\" data-end=\"1196\">Maria and Teresa Solivellas<\/strong> had relocated their restaurant from Caimar\u00ed, <strong data-start=\"1242\" data-end=\"1258\">Ca na Toneta<\/strong>, 40 kilometers away, to serve their responsible, personal, and intuitive cuisine, adding the <strong data-start=\"1352\" data-end=\"1416\">exuberance of the estate and the solemnity of the interiors.<\/strong><\/p>\n<p data-start=\"1418\" data-end=\"1619\">Maria went to pick mandarins from the orchard, which would be part of the dessert with <strong data-start=\"1505\" data-end=\"1535\">pumpkin in three textures.<\/strong> It was the second time she tasted their dishes without ever having been to Caimar\u00ed.<\/p>\n<p data-start=\"1621\" data-end=\"1803\"><strong data-start=\"1621\" data-end=\"1662\">Attachment to the land, to the season<\/strong>, to what is available at each moment, giving up market whims, which is the irrational desire of so many chefs with their heads in the stars.<\/p>\n<p data-start=\"1805\" data-end=\"1925\">The cook defined herself without losing her smile: <strong data-start=\"1856\" data-end=\"1925\">\u201cTaliban of the local product, seasonality, and Mallorquinity.\u201d<\/strong><\/p>\n<p data-start=\"1927\" data-end=\"2428\">The starter was a desirable punch: the <strong data-start=\"1966\" data-end=\"1989\">\u2018matanza\u2019 ensaimada<\/strong> from Can Salem; then, the onion consomm\u00e9 \u2018al caliu\u2019 and on the plate, the little fish called <strong data-start=\"2083\" data-end=\"2131\">\u2018jonquillo\u2019 with osmosed apple and \u2018allioli\u2019<\/strong>, a tasty extravagance; the <strong data-start=\"2159\" data-end=\"2181\">cuttlefish tartare<\/strong> with peas and sobrassada juice, a top-notch dish; the <strong data-start=\"2236\" data-end=\"2274\">red mullets with vegetable sofrito<\/strong> and an imperial potato, and the <strong data-start=\"2307\" data-end=\"2330\">\u2018porc negre\u2019 cheeks<\/strong> with baked apple. Such a pity that this <strong data-start=\"2371\" data-end=\"2428\">impossible restaurant was born and died the same day.<\/strong><\/p>\n<p data-start=\"2430\" data-end=\"2839\">The wines were part of a game: <strong data-start=\"2461\" data-end=\"2490\">Quim Vila and Siscu Mart\u00ed<\/strong>, owners of Vila Viniteca, had organized the trip to present the poster for the 17th Couples Tasting Contest (to be held in Madrid on March 23), created by <strong data-start=\"2646\" data-end=\"2681\">Sergio Caballero and Franc Aleu<\/strong>. The morning had started at the property Sergio shared with <strong data-start=\"2742\" data-end=\"2780\">Francesc Grimalt: 4 Kilos Vin\u00edcola<\/strong>, who make some of the <strong data-start=\"2803\" data-end=\"2824\">most elegant reds<\/strong> on the island.<\/p>\n<p data-start=\"2841\" data-end=\"2963\">The blind tasting was an <strong data-start=\"2866\" data-end=\"2884\">awkward moment<\/strong> resolved with laughter and the curious perplexity of the visitors who sniffed.<\/p>\n<p data-start=\"2965\" data-end=\"3315\">There were <strong data-start=\"2976\" data-end=\"2986\">boasts<\/strong> and few correct guesses in the impossible task of announcing variety, vintage, and winery with only the clues dictated by <strong data-start=\"3109\" data-end=\"3127\">mouth and nose<\/strong>. Wines with top ratings circulated, such as the 2021 Sassicaia, which the guessers saw a future for but was still finishing. Or the very old Valdespino muscatel, a <strong data-start=\"3292\" data-end=\"3315\">pact with eternity.<\/strong><\/p>\n<p data-start=\"3317\" data-end=\"3554\">Next to the hall was the so-called Queen\u2019s Room, where <strong data-start=\"3372\" data-end=\"3391\">Queen Isabel II<\/strong> once slept. Tempted by a royal nap, the plane required a prompt arrival at the airport.
